Mike has been an Oyster farmer for 13 years before having an Oyster Wine bar in Melbourne
Pambula Lake is Regarded as one of the cleanest Lakes in N.S.W
The Lake is Classified and depuration is unneccessary,
harvesting is all year round, however Mike prefers to harvest in July, August or around those months (working around his entertainment schedule).
Oysters grown are Sydney Rock and Angasi (flat oyster).
Mike is involved with a test run of Pearl Oysters (Okoya) with the fisheries.
